Concessionaire OTG has announced that six of its restaurants at Newark Liberty International Airport will take part in New York’s White Truffle Festival, taking place from November 5-12, 2016.
OTG partnered with truffle supplier Urbani Truffles to fly more than 200 lb of white truffles into the airport, valued at US$600,000. The truffle specialist also provided OTG’s culinary and hospitality teams with specialist truffle-handling training at its Truffle Lab in Manhattan.
Restaurants taking part in the festival include Abruzzo Italian Steakhouse, Casciano’s, Caps Beer Garden, Wanderlust Burger Bar, Saison and DAILY.
Chef Mario Carbone, said, “It’s exciting to have a collection of restaurants participate, each with their own unique style and take on how to use truffles in our dishes. Like at DAILY and Saison, we’ll incorporate fresh truffles and truffle products, not only into our menu at Abruzzo, a traditional steakhouse, but also at the more casual Casciano’s, where we’ll use truffle cream in our paninis, for example. While Wanderlust is going with black truffle burgers from Pat LaFrieda Meat Purveyors.”
