Restaurateur OTG has opened its latest dining concept in Terminal C at Newark Liberty International Airport in New Jersey.
Japanese-themed restaurant Kaedama serves as a centerpiece for the terminal’s new Global Bazaar dining precinct, and features an array of Japanese classics served in state-of-the-art surroundings.
Named after the Japanese term for requesting a second serving of noodles, Kaedama provides a true taste of Tokyo offering traditional and fusion ramen noodles, soups and dumplings. Highlights include Peking Duck Tacos; Firecracker Dumplings; Rice Bowls with fresh ahi tuna, salmon, octopus or Peking duck; and Ramen options ranging from Fried Chicken Shoyu to Pork Tonkostu.
Inspired by the streets of Tokyo, Kaedama features a six-point, star-shaped counter that wraps around an elevated open kitchen, adding an element of theater to the dining experience.
The concept’s key design feature is a 40ft art installation wrapped in an LED mesh display comprising 17,000 lights. A nod to Tokyo’s brightly lit city signage, the gold tower centerpiece features an array of custom Japanese-inspired animations that transition throughout the day.
Kaedama, as with OTG’s other restaurant locations, utilizes iPads for guests at each seat. OTG’s flo software enables travelers to order food and amenities from an intuitive visual menu; track their flights with real-time flight notifications; and play games and access the web.
