Renowned chef Dan Kluger, the founder of Loring Place restaurant in New York City, has partnered with food and beverage (F&B) operator OTG to design a unique farm-to-terminal menu for the latest offering at Newark Liberty International Airport in New Jersey.
Located in Terminal C, Vanguard Kitchen serves a range of appetizers and salads including steamed mussels with coconut broth and coconut flakes; beets and carrots with curry and honey yogurt; and steak and roasted pear salad with arugula and fennel in a pine nut vinaigrette. Entrees include a crispy Portobello sandwich with a carrot remoulade; black sea bass in a sweet onion and cauliflower cream; and a grilled pork chop in a caramelized apple and onion glaze.
Designed by architectural firm Rockwell Group, the space features a contrasting palette of deep purples and white, complemented by a central marble farm table and a large chrome light fixture hanging overhead. Additionally, OTG commissioned acclaimed artist James Nares to create a painting especially for the lounge. Vanguard is the latest in a series of OTG concepts to open at Newark as part of the company’s US$120m transformation of the United Airlines terminal.

Alongside its unique menu, Vanguard features a fully connected guest experience driven by OTG’s flo platform. Mounted iPads, located at every table throughout the restaurant, provide travelers with an intuitive visual menu as well as real-time flight notifications, games, entertainment and complimentary web access. Power and USB outlets are also available at every seat.
