Restaurateur SSP Canada has opened three new restaurants at Billy Bishop Toronto City Airport, Canada, offering a wider range of high quality, locally inspired food options for travelers.
OBISPO, Balzac’s Coffee Roasters and Market@416 are part of the newly designed airport lounges commissioned by Nieuport Aviation Infrastructure Partners, the owner and operator of Billy Bishop Airport. Each restaurant concept features menus that showcase flavors and dishes that reflect the region.
SSP Canada worked with renowned Toronto-based chef Grant van Gameren to create the menu and direction for OBISPO, which looks to create healthy yet tasty, grab-and-go meals for travelers. The collaboration led to the development of a simple menu of hot sandwiches, flatbreads, antipasto dishes and fresh salads.
Chef van Gameren said, “We created a menu that was as quick and convenient as the airport itself. There is something for everyone, with a focus on fresh, delicious food that can be prepared and consumed quickly – and that is portable enough to be taken on your flight.”
Market@416 focuses on traditional dining and includes dishes such as BBQ wings, pot stickers, street tacos, Montreal beef sandwiches, and hot dogs, as well as breakfast items such as a DowntownBenedict, Calabrese Flatbread and Steel Cut Oatmeal.
Balzac’s Coffee Roasters already has 13 locations in and around Toronto, including the iconic Distillery District location. Delivering coffee roasted in Ancaster, Ontario, and milk sourced only from regional dairies, Balzac’s offers a wide range of coffees, in addition to a variety of sweet and savory breakfast items.
